Poke Bowl with Norwegian prawns and peanut dressing

Simple, tasty and healthy dish with Norwegian prawns, avocado, rice, cashew nuts and peanut dressing.

  • Boil the rice according to the instructions on the packet.
  • Dice the mango and avocado into cubes, slice the onion into strips and wash the edamame beans.
  • Make the dressing by mixing the soy sauce and sesame oil in a bowl, finely chop the chili and garlic, and add to the mix. Then squeeze in the lime juice and finally mix in the peanut butter.
  • Fill bowls with rice and top with prawns, avocado, mango, edamame beans and red onion.
  • Toast chopped nuts or sesame seeds in a dry pan and use to top your bowls along with the coriander.
  • Serve with lime wedges and dressing.

Tip:
Pomegranate seeds, radish, sugar snap peas and spring onion also go great in this dish. Feel free to swap out any of the ingredients with your favourite vegetables!
